Our smoked hams highlight the best of pasture-raised Kune Kune pork — moist, flavourful, and perfectly smoked for a balance of savoury and sweet. Ham steaks have been a fan favourite cut from the start. Now available bigger and better as a delicious flavourful roast!
Offered bone-in for full depth of taste, this cut moves seamlessly from holiday centrepiece to refined leftovers, a showcase of heritage quality at its best.
Cooking Tip:
Pasture-raised pigs are happy and healthy and with ample space to roam - this results in more natural healthy muscle tone, which high heat can make tighten.
The Key is: Gentle heat + steam = soft, tender, juicy pork.
Suggested cooking method: low & slow, with liquid, and covered.
- Pre-heat oven to 275F-300F. Lower heat prevents the ham from tightening up and drying out.

Place the ham cut-side down in a roasting pan.
- Add 2 cups of liquid to the pan Or as needed for the size of your pan. Great options include: apple juice or cider, broth, or water with a bit of honey or maple syrup.
- Cover tightly with foil or lid. This traps steam and creates a gentle braising environment - key for tenderness!
- Heat until the thickest part reaches 160F. Expect approximately 11-15 minutes per pound at this temperature but will be dependent on your oven.
- Optional: Uncover for the final 10 minutes if you want a bit of caramelization on the outside.
- Rest for 10-15 minutes. Before slicing - resting allows the juices to redistribute and into the meat.
